Creamy Kimchi Doria (Rice Casserole) / クリーミーキムチドリア
Rice, creamy sauce, savory ingredients, all topped with cheese and baked in the oven. What could be better? This rice casserole is a Japanese favorite.

- 1 tbsp butter
- 1/2 lb thinly sliced pork
- 1/2 onion sliced
- 1/2 cup mushrooms
- 1 cup kimchi
- 1 tbsp flour
- 1 cup milk
- salt & pepper
- 2 cups cooked white rice
- 1/2 cup mozzarella cheese
- green onions chopped, for garnish
Preheat oven to 400 degrees F.
In a medium pan, add butter over medium heat.
Add the pork and cook slightly.
Add the sliced onions and mushrooms and cook until the onions soften slightly.
Add the flour and mix well.
Add in the kimchi and let it caramelize slightly. Then mix well.
Reduce the heat to low and add the milk slowly in two or three parts to prevent curdling. Mix well in-between each part.
Season with salt & pepper. Then remove from heat and set aside.
In a medium bowl, put in the cooked white rice and pour in the kimchi mixture. Mix well.
Put into small oven-safe ramekins or other containers and top with cheese.
In the preheated oven, place your doria for about 5 minutes or until the cheese is melted. (You can also broil the top for a couple minutes if you prefer).
Remove from the oven and top with green onions. Serve immediately.
