Creamy Kimchi Doria (Rice Casserole) / クリーミーキムチドリア

Rice, creamy sauce, savory ingredients, all topped with cheese and baked in the oven. What could be better? This rice casserole is a Japanese favorite.

Equipment

  • ramekins or other oven-safe dishes

Ingredients

  • 1 tbsp butter
  • 1/2 lb thinly sliced pork
  • 1/2 onion sliced
  • 1/2 cup mushrooms
  • 1 cup kimchi
  • 1 tbsp flour
  • 1 cup milk
  • salt & pepper
  • 2 cups cooked white rice
  • 1/2 cup mozzarella cheese
  • green onions chopped, for garnish

Instructions

  • Preheat oven to 400 degrees F.
  • In a medium pan, add butter over medium heat.
  • Add the pork and cook slightly.
  • Add the sliced onions and mushrooms and cook until the onions soften slightly.
  • Add the flour and mix well.
  • Add in the kimchi and let it caramelize slightly. Then mix well.
  • Reduce the heat to low and add the milk slowly in two or three parts to prevent curdling. Mix well in-between each part.
  • Season with salt & pepper. Then remove from heat and set aside.
  • In a medium bowl, put in the cooked white rice and pour in the kimchi mixture. Mix well.
  • Put into small oven-safe ramekins or other containers and top with cheese.
  • In the preheated oven, place your doria for about 5 minutes or until the cheese is melted. (You can also broil the top for a couple minutes if you prefer).
  • Remove from the oven and top with green onions. Serve immediately.
