Hiyashi Chuka with Sesame Sauce / ごまだれ冷やし中華

Next in my Japanese Summer Noodle Series is my favorite kind of Hiyashi Chuka (chilled ramen noodles): with Sesame Sauce!

Ingredients

  • 2 servings ramen noodles dried, frozen, or fresh
  • water to cook ramen

Goma Dare (Sesame Sauce)

  • 1/2 cup chicken broth
  • 3 tbsp nerigoma (white sesame paste)
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp rice vinegar
  • 2 tsp sesame oil
  • 1 tsp grated ginger

Toppings

  • chicken shredded
  • cucumber julienned
  • kinshi tamago (shredded egg crepe)
  • tomato quartered or sliced
  • sprouts

Instructions

  • Prep your topping ingredients.
  • In a bowl, combine all of the dressing ingredients. Set aside.
  • In a pot of boiling water, cook the ramen noodles according to package instructions.
  • Once cooked, drain and rinse the ramen under cold water to chill. You can also opt to put the cooked noodles in an ice bath.
  • In a bowl, put down your noodles, layer on the toppings, pour on the sauce, and enjoy!
