Ingredients
1tbspolive oil
1lb ground chicken
1tspgrated ginger
1tbspsake
2tbspsugar
1tbsp mirin
2tbspsoy sauce
4large eggsbeaten
2tbspsugar
2tspmirin
1tbspoil
2-3servings of ricecooked
green onionssliced for garnish
Instructions
Mix sake, sugar, mirin, soy sauce, and ginger in a bowl.
Heat the frying pan on medium heat and cook the chicken until almost cooked through. Break up the meat into small pieces.
Pour the sauce ingredients into the chicken and cook until liquid is about 80% gone.
For the scrambled eggs, beat the eggs in a small bowl and add sugar and mirin. Mix until sugar is completely dissolved.
Heat oil in a frying pan over medium low heat and pour the egg mixture in.
Using chopsticks, mix and break the egg while cooking in a circular motion to break the egg into small pieces. When it's done cooking, remove from heat.
Serve meat and egg over cooked steamd rice and garnish with green onions.
