Soboro-don (Minced Chicken Bowl) / そぼろ丼

A popular Japanese comfort food. Seasoned minced chicken with fluffy scrambled eggs on top of steamed rice.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 1 tsp grated ginger
  • 1 tbsp sake
  • 2 tbsp sugar
  • 1 tbsp mirin
  • 2 tbsp soy sauce
  • 4 large eggs beaten
  • 2 tbsp sugar
  • 2 tsp mirin
  • 1 tbsp oil
  • 2-3 servings of rice cooked
  • green onions sliced for garnish

Instructions

  • Mix sake, sugar, mirin, soy sauce, and ginger in a bowl.
  • Heat the frying pan on medium heat and cook the chicken until almost cooked through. Break up the meat into small pieces.
  • Pour the sauce ingredients into the chicken and cook until liquid is about 80% gone.
  • For the scrambled eggs, beat the eggs in a small bowl and add sugar and mirin. Mix until sugar is completely dissolved.
  • Heat oil in a frying pan over medium low heat and pour the egg mixture in.
  • Using chopsticks, mix and break the egg while cooking in a circular motion to break the egg into small pieces. When it's done cooking, remove from heat.
  • Serve meat and egg over cooked steamd rice and garnish with green onions.
