cooked rice
Instructions
In a small bowl, combine 1/4 of the chopped red onion, tomato, and cilantro. Squeeze the lemon on top and mix. This is the "salsa." Set aside.
Cut the lettuce into thin strips.
Heat oil in a large pan over medium heat. Cook garlic until fragrant and add the rest of the red onion and sautee.
Add the ground beef and break it into small pieces. Cook until browned.
Add taco seasoning and 1/2 cup water and mix well until sauce is thick and sticking to the beef.
Assemble the bowl: rice on the bottom, then top with lettuce, beef, salsa, and cheese. Enjoy!
