Hiyashi Chuka with Sesame Sauce / ごまだれ冷やし中華


Next in my Japanese Summer Noodle Series is my favorite kind of Hiyashi Chuka (chilled ramen noodles): with Sesame Sauce!

Hiyashi Chuka, or chilled ramen, is one of the most popular summer noodle dishes in Japan. I previously posted a Hiyashi Chuka recipe with a soy sauce based dressing, which is more common, but my favorite type of Hiyashi Chuka is one with goma dare, or sesame sauce.

The sesame sauce is thick, nutty, creamy, and flavorful. Maybe not quite as light or refreshing as the lighter soy sauce based dressing, but it’s seriously so, so good. It’s also extremely easy to make and can be enjoyed immediately.

Some topping ideas

Hiyashi Chuka is a fun dish since you can use any toppings you want! The toppings are typically cut into strips so they blend in with the noodles when eating. You can keep the vibe light with lots of veggies and kinshi tamago (shredded egg crepe), or you can make your dish heartier by adding chicken, shrimp, or soft boiled egg!

Ingredients

  • 2 servings ramen noodles dried, frozen, or fresh
  • water to cook ramen

Goma Dare (Sesame Sauce)

  • 1/2 cup chicken broth
  • 3 tbsp nerigoma (white sesame paste)
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp rice vinegar
  • 2 tsp sesame oil
  • 1 tsp grated ginger

Toppings

  • chicken shredded
  • cucumber julienned
  • kinshi tamago (shredded egg crepe)
  • tomato quartered or sliced
  • sprouts

Instructions

  • Prep your topping ingredients.
  • In a bowl, combine all of the dressing ingredients. Set aside.
  • In a pot of boiling water, cook the ramen noodles according to package instructions.
  • Once cooked, drain and rinse the ramen under cold water to chill. You can also opt to put the cooked noodles in an ice bath.
  • In a bowl, put down your noodles, layer on the toppings, pour on the sauce, and enjoy!
