- 2 servings udon noodles
- 3 tbsp butter
- 1/2 cup heavy cream
- 2 tbsp Kewpie (Japanese) mayonnaise
- 1 tbsp mentsuyu or dashi
- 4 tbsp mentaiko
- green onions chopped
In a pot of boiling water, cook 2 servings of udon noodles according to package instructions. Drain once cooked and set aside.
In a large pan on medium-low heat, add butter, heavy cream, Kewpie mayo, and mentsuyu or dashi. Mix well until heated (about 3 minutes)
Turn off the heat, add mentaiko, and mix well until combined.
Add the cooked udon noodles and toss in the sauce.
Plate the noodles on a plate or bowl and top with the chopped green onions.
