Mentaiko Cream Udon (Spicy Cod Roe Cream Udon Noodles) / 明太子クリームうどん

If you like Japanese style pastas definitely try this Mentaiko Cream Udon! Thick, chewy udon noodles in a lightly spicy, creamy, umami-full sauce.

Ingredients

  • 2 servings udon noodles
  • 3 tbsp butter
  • 1/2 cup heavy cream
  • 2 tbsp Kewpie (Japanese) mayonnaise
  • 1 tbsp mentsuyu or dashi
  • 4 tbsp mentaiko
  • green onions chopped

Instructions

  • In a pot of boiling water, cook 2 servings of udon noodles according to package instructions. Drain once cooked and set aside.
  • In a large pan on medium-low heat, add butter, heavy cream, Kewpie mayo, and mentsuyu or dashi. Mix well until heated (about 3 minutes)
  • Turn off the heat, add mentaiko, and mix well until combined.
  • Add the cooked udon noodles and toss in the sauce.
  • Plate the noodles on a plate or bowl and top with the chopped green onions.
  • Enjoy!
