Tsukimi Udon (Moon Viewing Udon) / 月見うどん

For Tsukimi, or the Moon Viewing Festival in Japan, people enjoy making food that is reminiscent of the full moon. This Tsukimi Udon is extremely easy to make, warms your soul, and captures the beauty of the full harvest moon.

Ingredients

  • 2 servings udon noodles
  • water for boiling udon
  • 2 green onions chopped
  • 4 pieces kamaboko sliced
  • 2 egg yolks separated from the white
  • shichimi togarashi
  • any other ingredients you would like

Soup/Broth

  • 2.5 cups dashi
  • 1 tbsp mirin
  • 1 tbsp sake
  • 2 tbsp soy sauce
  • 1 tsp sugar

Instructions

  • Bring water in a pot to a boil and add udon noodles. Cook according to package instructions and then drain. Set aside.
  • To prepare the broth, combine dashi, mirin, sake, soy sauce, and sugar. Boil until heated and combined.
  • In a bowl, add some noodles and broth.
  • Place on the toppings, sprinkle on some shichimi togarashi for spice, and enjoy!
