Creamy Kimchi Doria (Rice Casserole) / クリーミーキムチドリア


Love gratin? Then give doria a try! Doria uses rice instead of pasta and is just as comforting and cozy. This creamy kimchi doria is silky and full of umami!

What is doria?

Doria falls under yoshoku, Japanese Western-style food, and is a baked rice casserole dish. It is very similar to baked gratin but instead of pasta, rice is used. While it doesn’t seem like Japanese food, this dish was invented in Japan in the 1930s and is still very popular among adults and children today.

Rice, creamy sauce, savory ingredients, all topped with cheese and baked in the oven. What could be better? There are many variations of doria, with the most common being seafood doria in a creamy white sauce. This creamy kimchi doria utilizes the common doria white sauce but includes pork and kimchi instead. The kimchi gives it extra umami and a really nice, mild spice and bite that both cuts through and compliments the cream sauce well.

I really love eating doria year-round but it hits differently when I make it in the wintertime.

Don’t eat pork?

If you don’t eat or like pork, shrimp or chicken would be great with this dish as well! You can even take out the meat altogether and add in some extra veggies instead!

Equipment

  • ramekins or other oven-safe dishes

Ingredients

  • 1 tbsp butter
  • 1/2 lb thinly sliced pork
  • 1/2 onion sliced
  • 1/2 cup mushrooms
  • 1 cup kimchi
  • 1 tbsp flour
  • 1 cup milk
  • salt & pepper
  • 2 cups cooked white rice
  • 1/2 cup mozzarella cheese
  • green onions chopped, for garnish

Instructions

  • Preheat oven to 400 degrees F.
  • In a medium pan, add butter over medium heat.
  • Add the pork and cook slightly.
  • Add the sliced onions and mushrooms and cook until the onions soften slightly.
  • Add the flour and mix well.
  • Add in the kimchi and let it caramelize slightly. Then mix well.
  • Reduce the heat to low and add the milk slowly in two or three parts to prevent curdling. Mix well in-between each part.
  • Season with salt & pepper. Then remove from heat and set aside.
  • In a medium bowl, put in the cooked white rice and pour in the kimchi mixture. Mix well.
  • Put into small oven-safe ramekins or other containers and top with cheese.
  • In the preheated oven, place your doria for about 5 minutes or until the cheese is melted. (You can also broil the top for a couple minutes if you prefer).
  • Remove from the oven and top with green onions. Serve immediately.
