This easy Corn Butter Rice recipe made in the rice cooker is one of my favorite type of mixed rice!

What is Takikomi Gohan?

Takikomi Gohan are Japanese mixed rice dishes where the ingredients are often cooked along with the rice. The rice can be made in a traditional donabe or in an electric rice cooker.

The trend of Rice Cooker Meals

Recently on social media, rice cooker meals have been taking over. These are dishes or meals that are similar (or the same) as takikomi gohan as all the ingredients are placed into the rice cooker with the uncooked rice and then cooked together.

These dishes make for easy meals and easy cleanup since they are all in one pot.

Corn Butter Rice / コーンバター炊き込みごはん

Easy and delicious!

Ingredients

  • 2 c uncooked Japanese rice rice cooker cups
  • 1 can sweet corn or 2 ears with kernels cut off
  • water
  • 2 tbsp soy sauce
  • 2 tbsp sake
  • salt
  • black pepper
  • 2 tbsp butter
  • green onions chopped, for topping

Instructions

  • Wash rice and place it in the rice cooker
  • Add the soy sauce and sake to the rice. Add water and fill up to the 2 cup line. Give it a quick stir.
  • Add in the corn kernels (do not mix in). Close the rice cooker and start normally.
  • Once the rice cooker completes the cook cycle, open the rice cooker, add butter and salt & pepper (to taste) and mix well.
  • Top with green onions or topping of choice. Serve and enjoy!
