A delicious matcha variation to the popular Dalgona Coffee trend: a whipped, fluffy cloud of matcha on milk.

If you haven’t heard, Dalgona Coffee has been taking over the internet. It first gained popularity on TikTok and has since spread across all other platforms. It’s definitely going to be one of the remembered quarantine food fads.

What is dalgona coffee?

Dalgona coffee is named after dalgona – a popular South Korean street toffee candy. Originally, dalgona coffee is made by mixing instant coffee, water, and sugar into a whipped concoction and topping it on top of milk, to be mixed into a delicious, creamy drink. I am not a coffee person so I wanted to try the matcha version – which is actually made differently than the coffee version. As instant coffee is processed a certain way, it will fluff up on its own and is super quick to make. Matcha by itself will not fluff up the way the instant coffee version does. To make the matcha version, you basically make an Italian meringue and add matcha. It’s more time consuming but it’s a fun drink to try to make. Plus, it’s delicious!

I wasn’t planning on posting the recipe but after posting this on Instagram yesterday, there were lots of requests for the recipe! My apologies for not having better photos of my drink since this wasn’t anticipated. It was, however, very yummy.

For this recipe (and the original coffee one), you will need to whisk… a lot. I used a standing mixer to make it way faster but you can use a hand mixer, frother, or mix it manually with a whisk by hand. I will warn you, if you do the last way, it’s completely doable but you’ll get a really good workout since it will take a while.

Ingredients

  • 1/4 cup water
  • 1/4 cup sugar
  • 1 tsp matcha powder
  • 1 egg white
  • milk of choice

Instructions

  • Create a simple syrup: In a small saucepan, combine water and sugar. Simmer and mix often until it becomes a thick simple syrup.
  • Whisk egg whites until fluffy.
  • Slowly add simple syrup into the fluffy egg whites until peaks form.
  • Add in matcha.
  • Mix together until matcha is combined.
  • Serve topped on a glass of milk.

Notes

Even though an egg white is used, it does NOT taste like egg. It tastes like matcha meringue (because that is what it is). When you add the hot simple syrup it makes egg whites okay to eat, just like meringue, so don’t worry!
