Soboro–don is a Japanese minced chicken bowl that is a popular Japanese comfort food. Seasoned minced chicken with fluffy scrambled eggs on top of steamed rice – what can get better than that?
Soboro-don (そぼろ丼) is one of my favorite Japanese dishes. While it’s not commonly found in Japanese restaurants, it’s a very popular dish to make at home for a meal or for a bento lunch. It’s simple, super fast, and delicious.
You can easily add veggies on the side (like peas!) and it’s also common to add pickled red ginger (beni shoga) on top to add another fresh layer of flavor. Sometimes I even add shichimi togarashi (Japanese dried spice blend) to give it a little kick.
Aside from chicken, you can use other protein such as ground beef, pork or turkey (and probably crumbled tofu but I’ve never personally tried this).

Soboro-don (Minced Chicken Bowl) / そぼろ丼
Ingredients
- 1 tbsp olive oil
- 1 lb ground chicken
- 1 tsp grated ginger
- 1 tbsp sake
- 2 tbsp sugar
- 1 tbsp mirin
- 2 tbsp soy sauce
- 4 large eggs beaten
- 2 tbsp sugar
- 2 tsp mirin
- 1 tbsp oil
- 2-3 servings of rice cooked
- green onions sliced for garnish
Instructions
- Mix sake, sugar, mirin, soy sauce, and ginger in a bowl.
- Heat the frying pan on medium heat and cook the chicken until almost cooked through. Break up the meat into small pieces.
- Pour the sauce ingredients into the chicken and cook until liquid is about 80% gone.
- For the scrambled eggs, beat the eggs in a small bowl and add sugar and mirin. Mix until sugar is completely dissolved.
- Heat oil in a frying pan over medium low heat and pour the egg mixture in.
- Using chopsticks, mix and break the egg while cooking in a circular motion to break the egg into small pieces. When it's done cooking, remove from heat.
- Serve meat and egg over cooked steamd rice and garnish with green onions.

When I dine out my preference is Japanese. I never enjoyed vegetables until started eating Asian food about 20 years ago (I’m 63 going on 64). I will retire soon would like to use some these recipes at. Someday even go to Japan and go to rural areas and enjoy the local food there.
That’s awesome that Asian food helped you to enjoy veggies! I hope you enjoy cooking some of these when you retire and that you can stop by Japan sometime. The food in the rural areas is the BEST!
