Spicy Miso Salmon Burger / スパイシー味噌サーモンバーガー


I teamed up with Shin-sen-gumi to make this burger with a spicy, Japanese twist using their spicy miso! This spicy miso salmon burger will become a staple during grilling season.

If you’re looking for a unique burger option, I recommend making salmon burgers. I often make a variation of this at home but I jazzed it up this time by adding spicy miso into the mix and topping it with a spicy miso aioli (using Kewpie mayonnaise, of course). It’s sweet, spicy, and savory all between two fluffy buns.

You can pick up Shin-sen-gumi’s spicy miso at the Shin-sen-gumi 2 Go in Gardena and Shin-sen-gumi Fountain Valley restaurant locations. If you aren’t able to get their spicy miso, you can use your favorite hot sauce (like gochujang or sriracha) or shop a different brand of spicy miso that I have in my Pantry or in the “Shop this post” section below.

Ingredients

  • 1 lb salmon fillet skinless, boneless and cut into 2 inch pieces
  • 1 tbsp cilantro chopped
  • 1/2 tbsp Shin-sen-gumi Spicy Miso
  • 1 tbsp hoisin sauce
  • 1/2 tsp garlic minced
  • 1 tsp ginger grated
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup panko
  • oil
  • 4 burger buns
  • 1 cup baby greens
  • 1 tomato sliced

Aioli

  • 1/4 cup Kewpie or Japanese mayo
  • 1 tsp Shin-sen-gumi spicy miso
  • 1 tsp lemon juice

Instructions

  • In a food processor, pulse the salmon cubes enough for a small chop but not a puree. Make sure to not overprocess the fish.
  • In a bowl, put in chopped salmon, cilantro, spicy miso, hoisin sauce, garlic, ginger, salt, pepper, and panko. Mix well (mixing with your hands is best).
  • Form the mixture into 4 patties.
  • Make the spicy miso aioli by whisking together the mayo, spicy miso, lemon juice, and soy sauce.
  • Heat up a pan over medium-high heat and pour in oil. Place salmon patties on the pan and cook for 3 minutes on each side or until cooked.
  • Assemble burgers using the buns, salmon patties, spicy miso aioli, baby greens, and slice of tomato.
