Honey + Strawberry Pocky Ice Cream


A fun ice cream flavor using a favorite Japanese snack: POCKY! This Honey and Strawberry Pocky Ice Cream tastes like frozen nostalgia.

Have you had Pocky before? They are biscuit sticks that are coated in different flavors of frosting (like chocolate or strawberry) – and have been one of Japan’s most popular snacks since the 1960s. I feel a lot of nostalgia around Pocky since I grew up eating them (they are my plane snack of choice) so I was super excited to team up with them to create this recipe!

I wanted to make an ice cream that was light but really tasted like Pocky. Honestly, I didn’t expect this to turn out well at all but it’s now honestly one of my favorite ice cream flavors of all time. It’s sort of like a fruity cookies and cream kind of vibe.

Honey + Strawberry Pocky Ice Cream

One of the most fun ice cream flavors using a favorite Japanese snack: Pocky!

Equipment

  • Ice cream maker

Ingredients

  • 1 cup whole milk
  • 2 cups heavy cream
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • strawberry Pocky

Instructions

  • Prepare your ice cream machine according to manufacturer's directions.
  • Stir milk, cream, sugar, and honey into a saucepan over low heat until the sugar and honey are dissolved.
  • Remove from heat and put into a container. Mix in vanilla extract and chill until very cold (a minimum of 2 hours to overnight).
  • Pour cold ice cream mix into your ice cream maker and start churning to the manufacturer's directions.
  • Break up strawberry pocky sticks into small pieces.
  • Once the ice cream starts forming softly, put in the strawberry pocky pieces and continue to mix.
  • Once it's ready, serve or place in freezer for later (place plastic wrap directly on the ice cream if freezing).
  • Serve with honeycomb or a drizzle of honey and extra Pocky sticks!
